BROCCOLI CAULIFLOWER CASSEROLE
Try this broccoli recipe !
INGREDIENTS
  • 1 bunch of broccoli
  • 1 head of cauliflower
  • 1 can of (evaporated) milk
  • 1 can of cream of mushroom soup
  • 1 can of cream of chicken/celery soup
  • 2 cloves of garlic
  • pinch of salt
  • 1 tbsp. of paprika
  • 1 tbsp. of oregano
  • 1/2 tsp. of cayanne pepper (if desired)
  • 1/2 cup of Parmesan cheese
  • *1/4 cup of softened butter is optional (to be mixed with soup and milk)

INSTRUCTIONS
Cut broccoli and cauliflower into edible-sized pieces of and set aside for the moment. Crush/mince the garlic and add the pinch of salt to the garlic, for this will help the mincing if you're doing it by hand.
In a mixing bowl, combine milk and both cans of soup and mix well.
You may mix the spices in with the soup mix at this time, as well as with the garlic, or you can add the spices at the end to top off the casserole.
Finally, put the broccoli and cauliflower in a casserole dish, then pour the soup mix and spices over top, distributing evenly.Sprinkle the Parmesan cheese over the top and bake (covered)for about 30-40 minutes at 350F, or until vegetables are soft enough to eat.

A variation of this recipe might include red peppers or sauteed chicken breast (both are quite good), which can be mixed in with the soup mix.
The combination of spices included here is only a guideline, and you are encouraged to try your own combinations, although you shouldn't leave out the garlic. The broccoli recipe with cauliflower is ready to serve..! great !

BROCCOLI SALAD INGREDIENTS
  • 1/4 cup creamy or chunky peanut butter
  • 2 tablespoons Equal spoonful*
  • 1-1/2 tablespoons hot water
  • 1 tablespoon lime juice
  • 1 tablespoon light soy sauce
  • 1-1/2 teaspoons dark sesame oil
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons vegetable oil
  • 3 cups fresh broccoli florets
  • 1/2 cup chopped red bell pepper
  • 1/4 cup sliced green onions
  • 1 clove garlic, crushed
Broccoli Recipe INSTRUCTIONS
Combine peanut butter, Equal, hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended; set aside.Heat vegetable oil in large skillet over medium-high heat. Add broccoli, red pepper, green onions and garlic. Stir-fry 3 to 4 minutes until vegetables are tender-crisp. Remove from heat and stir in peanut butter mixture.

  • 1 large head broccoli
  • 1 small red onion, halved and thinly sliced
  • 1/2 cup raisins
  • 1/3 cup chopped pecans or sunflower seeds
  • 3/4 cup light salad dressing or mayonnaise
  • 2 tablespoons fat-free milk
  • 2 tablespoons white vinegar
  • 1/2 cup Equal Spoonful*
  • Salt and pepper, to taste
  • 4 slices bacon, cooked crisp and crumbled

INSTRUCTIONS
Clean, trim and chop broccoli into a large bowl. Add onion, raisins and pecans.Mix together salad dressing, milk, vinegar and Equal®; stirring until smooth. Pour dressing over salad; add salt and pepper, to taste.

INGREDIENTS
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 4 teaspoons chicken bouillon, instant
  • 1 pound processed American cheese, cubed
  • 4 cups milk
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic salt
  • 10 ounces broccoli, frozen, cooked

INSTRUCTIONS
Saute onion in butter in saucepan until tender. Sprinkle with flour.
Stir in bouillon dissolved in 2 cups hot water. Cook until smooth and thick stirring constantly. Add cheese stirring until melted. Stir in milk gradually. Add seasonings and broccoli with cooking liquid mixing well. The broccoli recipe chowder is ready to serve...!

  • 3 pounds broccoli, cooked
  • 2 cups rice, cooked
  • 21 ounces cream of mushroom soup
  • American cheese, sliced
  • salt, to taste

INSTRUCTIONS
Mix cooked broccoli, rice, cream of mushroom soup and salt together.
Spread mixture in a 9 x 13 pan. Arrange sliced cheese on top of mixture.

CALAMARI, BROCCOLI AND ENDIVE

CALAMARI, BROCCOLI AND ENDIVE ,....a nice broccoli recipe to try....delicious !

INGREDIENTS
  • 1 lb squid (calamari), cleaned
  • 1 lb broccoli crowns
  • 1/2 head endive (tops and center)
  • 3-4 cloves garlic, thinly sliced
  • 1 shallot, minced (optional)
  • 1/4 teaspoon red pepper flakes
  • 4 tablespoons extra virgin olive oil (more if needed)
  • 1/2 cup black olives, sliced or chopped
  • 1/4 teaspoon each basil and oregano
  • salt and pepper, to taste (or Morton's Hot Salt)
  • a few drops balsamic vinegar
  • 1 packet True Lemon or 1 teaspoon lemon juice (optional)
  • Romano cheese (for sprinkling)

INSTRUCTIONS
Prepare squid by washing well, removing center tubes. Leave tops whole (the purple part) and slice the white portion into rings. (Or purchase pre-cleaned squid at the fish market).

In a skillet, saute squid over high heat for 5 minutes in olive oil.
Add garlic (and shallot if using), broccoli crowns and red pepper flakes. Stir in basil and oregano. Add additional olive oil to coat all if required. Saute 5 minutes over medium heat and then reduce heat and cover for 5 more minutes. Broccoli should remain a bright green, with tinges of browning, but should never become an olive green (if it becomes olive green then the broccoli has been overcooked).

Chop black olives if you're using oil cured olives, or if you have ripe canned and pitted olives, slice into rings and add to pan. Add washed endive tops and the center (heart) of the head. Leave the
heavy bottom stalks of the endive for soup.

Add balsamic vinegar, True Lemon or lemon juice (if using). Saute 2-3 minutes more or until broccoli can be pierced with a fork (try one - it should still have a very slight crunch to it) and the endive is just wilted.

This can be prepared without the balsamic vinegar or the lemon, but finishing with the these two ingredients adds a uniquely Sicilian style tanginess that really makes the dish authentic. Sprinkle with a touch of Hot Salt before serving and a tablespoon of grated Romano cheese to add a final kick.This can be served on its own, or may be served over pasta or rice/ The broccoli recipe is ready to serve....great taste ! INGREDIENTS
  • 1-2 pounds broccoli
  • 6-8 cloves garlic, sliced
  • 1/4 teaspoon hot red pepper flakes
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/3 cup extra virgin olive oil or enough to coat
INSTRUCTIONS
Slice broccoli into long portions, each with a stem and a "tree top". Slice directly through the "trunk," including a small section with each piece.
Steam broccoli in a steamer or by placing in a large covered skillet with a small amount of water.
Cook broccoli only until it attains a bright green color, then remove from heat. Broccoli will still be firm and may appear not to be completely cooked. This is as it should be, as the broccoli with
continue to cook when removed from heat.Pour on the olive oil, very thinly sliced garlic, hot pepper and salt to taste.

Place all into a refrigerator container and marinate overnight. Serve cold or at room temperature.This is a wonderful accompaniment to any main course on a hot summer day!

Note: It's crucial not to overcook the broccoli in this dish, and you might overcook it very easily if you don't keep a close watch. When properly cooked, the broccoli will be "al dente" and a beautiful bright green color. If your broccoli is wilted and olive green, it's overdone!
